Smoked Fish Stuffed Peppers

Recipe Ingredients:

6 ounces smoked haddock or whiting, skinned and cubed
1 (4.5-ounce) package savory golden rice with peas, sweet peppers, carrots and onion
2 large red bell pepper
4 tablespoons olive oil

Cooking Directions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook the savory rice according to package instructions.
  3. Stir fish into cooked rice.
  4. Brush oil over the base of an 8x8x2-inch baking dish.
  5. Cut peppers in half lengthwise and place them inside baking dish.
  6. Stuff the rice and fish mixture equally into the peppers and drizzle remaining olive oil over the top.
  7. Bake in the oven 30 to 40 minutes, until golden.
  8. Serve with a green salad to complete the meal.

Makes 2 servings.
