Smoked Fish Stuffed Peppers

Recipe Ingredients:
6 ounces smoked haddock or whiting, skinned and cubed
1 (4.5-ounce) package savory golden rice with peas, sweet peppers, carrots and onion
2 large red bell pepper
4 tablespoons olive oil
Cooking Directions:
- Preheat the oven to 350°F (175°C).
- Cook the savory rice according to package instructions.
- Stir fish into cooked rice.
- Brush oil over the base of an 8x8x2-inch baking dish.
- Cut peppers in half lengthwise and place them inside baking dish.
- Stuff the rice and fish mixture equally into the peppers and drizzle remaining olive oil over the top.
- Bake in the oven 30 to 40 minutes, until golden.
- Serve with a green salad to complete the meal.
Makes 2 servings.
