Smoked Haddock Gnocchi

Recipe Ingredients:
1 pound smoked haddock or smoked whiting fillets, skinned and cubed
1 (12-ounce) package spinach potato gnocchi or pasta
2 tablespoons vegetable oil
2 green onions, chopped
1 clove garlic, crushed (optional)
4 ounces sliced green beans
1/2 jar of cheese or carbonara sauce
Ground black pepper to taste
Cooking Directions:
- Cook the gnocchi or pasta according to the package instructions.
- Meanwhile, heat the oil in a pan; add the green onions, garlic and green beans. Cook for 1 to 2 minutes.
- Stir in the sauce, bring to the boil, reduce the heat and add the fish. Cover and cook for 8 to 10 minutes, occasionally stirring gently.
- Add the prepared gnocchi and season. Serve with a crisp salad.
- For larger appetites serve with crusty granary, French or pita bread.
Makes 4 servings.
