Spicy Citrus Grilled Fish

2 (4-ounce) herring, mackerel or snapper fillets
Rind and juice of half lemon
Rind and juice of half lime
2 teaspoons Thai or Cajun spice mix
Lime for garnish
- Place the fillets onto a grill pan. Spoon over the rind and juice of the lemon and lime. Sprinkle fillets with the spices.
- Cook on the grill for 5 to 8 minutes, until golden brown, turning once.
- Garnish with lime and serve with potato wedges and a crisp salad.
Makes 2 servings.
