Spicy Crab

Spicy CrabRecipe courtesy of Seafish, the UK Sea Fish Industry Authority.

Recipe Ingredients:

White Sauce:
1 tablespoon butter or margarine
1 tablespoon all-purpose flour
5 ounces milk

8 ounces mixed crabmeat
1/2 of an onion, grated (or finely minced)
1 teaspoon Tabasco sauce
1 hard-boiled egg, chopped
2 tablespoons plain yogurt
Salt and ground black pepper to taste
1 to 2 tablespoons freshly grated Parmesan cheese
Paprika for sprinkling
Lime wedges, for garnish

Cooking Directions:

  1. For White Sauce: Melt butter in small saucepan; stir in flour and cook for 1 minute. Stir in milk and cook, stirring constantly, until thickened.
  2. Stir crabmeat, onion, Tabasco and egg into the sauce. Simmer for 3 to 4 minutes, then remove from heat and stir in yogurt and seasoning.
  3. Spoon into individual dishes, and sprinkle with Parmesan and a little paprika. Place under a medium-low broiler and cook until golden brown
  4. Garnish and serve with a tossed green salad, if desired.

Makes 2 servings.

Tip: Try substituting 8 ounces of cooked flaked smoked fish such as cod or haddock for the crabmeat.
