Steamed Lobster

Recipe Ingredients:

2 (1-pound) whole uncooked lobsters
3 tablespoons salt
Clarified butter for accompaniment

Cooking Directions:

  1. Thaw lobsters if frozen.
  2. In a 6-quart saucepan, bring 3 quarts of water and salt to a boil.
  3. Place lobsters in boiling water; cover and return to boiling point. Reduce heat; simmer 12 to 15 minutes. Larger lobsters will take a little more cooking time.
  4. Drain; rinse with cold water for 1 to 2 minutes.
  5. Split and clean lobsters. Serve with clarified butter.
