Steamed Szechuan Alaska Cod

Recipe Ingredients:
4 Alaska Black Cod fillets (6 to 8 ounces each), fresh, thawed or frozen
2 tablespoons Szechuan (hot) chili paste
2 tablespoons rice wine or dry sherry
1 tablespoon sesame oil
1 cup green onions, cut in long shreds
2 tablespoons sesame seeds
Cooking Directions:
- Rinse any ice glaze from frozen Alaska Cod under cold water; pat dry with paper towel. Blend chili paste, wine and sesame oil. Brush mixture onto cod fillets; top with green onions.
- Bring 1-inch of water to boil in large pan. Turn off heat and place Chinese bamboo steamer, wire basket or vegetable steamer in pan.
- Place cod fillets in the steamer and return water to a boil. Cover pan loosely and cook for 8 to 10 minutes for frozen cod or 4 to 6 minutes for fresh/thawed fish. Cook just until fish is opaque throughout. Garnish with sesame seeds.
