Stir Fried Scallops

Recipe Ingredients:

8 ounces prepared scallops
2 tablespoons vegetable oil
1 small zucchini, cut into strips
3 stalks celery, sliced
3 ounces carrots, cut into strips
3 ounces spring onions, sliced
Salt and ground black pepper to taste
Chinese noodles for accompaniment

Cooking Directions:

  1. Cut the scallops into thin slices, leaving the coral whole.
  2. Heat the oil in a wok or large pan and fry the scallops for about 3 minutes.
  3. Add the zucchini , celery, carrots and spring onions and stir fry for a further 3 minutes, until scallops are cooked and vegetables just begin to soften. Season.
  4. Serve immediately with Chinese noodles.

Makes 2 servings.
