Stuffed Sole with Spicy Tomato Sauce

4 (6-ounce) sole fillets, skinned
1 (3-ounce) package soft cheese with herbs, softened
1 teaspoon chopped fresh flat-leaf parsley
3 tablespoons pasta sauce
- Preheat oven to 375°F (190°C).
- Place fillets on a chopping board skinned side up. Spread with soft cheese and sprinkle with parsley. Roll fillets and secure with a cocktail stick, if necessary.
- Place fish rolls into a greased oven-proof dish and spoon pasta sauce over. Cover and bake10-15 minutes
- Serve with fresh pasta and green vegetables.
