Sweet and Sour Fish

1 small onion, finely chopped
1 (13-ounce) jar sweet-and-sour sauce
1 (8-ounce) can sweet corn, drained
1 1/2 pounds haddock or coley fillets, skinned and cubed
Chopped fresh flat-leaf parsley, for garnish
- Put the onion and sweet and sour sauce into a microwavable bowl, cover and cook on HIGH for 2 minutes and 30 seconds.
- Stir in the sweet corn and fish, cover and cook on HIGH for 4 minutes and 30 seconds, stirring once during the cooking time.
- Leave to stand for 2 to 3 minutes before serving.
Makes 4 servings.
