Tamarind and Lime Stir-fry Scallops

Recipe Ingredients:

1 pound queen scallops*
1 1/2 ounces fresh (refrigerated) noodles
2 teaspoons olive oil
1 garlic clove, crushed
1 (12 ounce) package oriental stir-fry vegetables
3 1/2 ounces snow peas, halved
1 (10.5-ounce) jar tamarind and lime stir-fry sauce

Cooking Directions:

  1. Cook noodles in boiling salted water for 3 to 4 minutes.
  2. Heat the olive oil in a large frying pan or wok. Add the garlic and scallops. Stir continuously for 3 minutes.
  3. Add the stir fry vegetables and snow peas. Stir frequently.
  4. Drain noodles and add to pan. Stir thoroughly. Pour in the sauce and heat for 2 to 3 minutes until piping hot. Serve immediately.

Makes 4 servings.

*You may substitute smaller sea scallops for this variety.
