Barbecue Rice Platter

No recipe image available.A unique and tasty side dish of sautéed onions and cooked rice flavored with barbecue sauce, liquid smoke and other seasonings.

Recipe Ingredients:

1 tablespoon vegetable oil
1/3 cup chopped onion
3 cups cooked rice*
1/2 cup barbecue sauce
1/4 cup sliced green onion
1 teaspoon chopped cilantro
1/2 teaspoon garlic powder
1/4 teaspoon liquid smoke

Cooking Directions:

  1. Heat oil in large skillet over medium-high heat. Add onion; cook 2 to 3 minutes or until translucent. Add rice, barbecue sauce, green onion tops, cilantro, garlic powder and liquid smoke. Cook until thoroughly heated.
  2. Serve with barbecued chicken breast, sliced pork or beef.

Makes 6 servings.

*According to the USA Rice Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid for 18 to 20 minutes will yield approximately 3 to 4 cups cooked rice.
