Black Bean and Rice Medley

No recipe image available.A simple side dish of black beans, rice, tomato, green onions and cheddar cheese tossed with lime juice and Italian dressing. Serve at room temperature or chilled.

Recipe Ingredients:

3 cups cooked rice*
1 (16-ounce) can black beans, drained and rinsed
1 large tomato, seeded and chopped
1/2 cup (2 ounces) shredded cheddar cheese
4 green onions, chopped
1/3 cup prepared Italian dressing
1 tablespoon lime juice (optional)

Cooking Directions:

  1. Combine rice, beans, tomato, cheese and onions in large bowl. Pour dressing and lime juice over rice mixture and toss. Serve at room temperature or chilled.

Makes 6 servings.

*According to the USA Rice Federation, 1 cup uncooked long grain rice cooked in 2 cups liquid for 18 to 20 minutes will yield approximately 3 to 4 cups cooked rice.
