Deep Fried Asparagus
These crispy, beer-battered and deep-fried asparagus spears are wonderful served alongside a juicy hamburger — as well as a variety of grilled meats.
Recipe Ingredients:
1/2 cup cornstarch
3/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon celery salt
1/2 teaspoon baking soda
1 teaspoon baking powder
2 large egg whites
2/3 cup cold flat beer
3 pounds raw, whole asparagus, cleaned and cut above white end
Peanut oil for frying (approximately 1 quart)
Cooking Directions:
- Mix all ingredients except asparagus in a bowl with a wire whisk until well blended.
- Heat deep-fat fryer to 350°F (175°C), or heat at least 2-inches of oil in a large frying pan or Dutch oven.
- Dip asparagus individually into the batter and deep-fry them for 2 minutes or until golden brown.*
Makes 6 servings.
*For best results, do not over-crowd the pan when deep-frying.
