Fried Frozen Okra
Skillet-fried okra is a delicious, crunchy delight that can be enjoyed any time of the year, thanks to the convenient availability of frozen okra year-round.
Recipe Ingredients:
1 (12-ounce bag) frozen cut okra, thawed
2 tablespoons all-purpose flour
About 4 tablespoons white cornmeal, or as needed
Salt and freshly ground black pepper to taste
Light olive oil, as needed for frying
Cooking Directions:
- Early in the day, place the frozen in a medium-sized mixing bowl to thaw completely. (Cut large pieces in half and remove any stems, if desired.)
- When okra is completely thawed and ready to cook, add flour, cornmeal, salt and pepper to the bowl; stirring to coat well, adding more cornmeal if needed to coat each piece, but not so much as to have an excess at the bottom of the bowl.
- Meanwhile, add enough oil to generously cover the bottom of a large skillet; heat oil on medium high until hot, but not smoking. Carefully place the breaded okra into the hot oil all at one time, spreading it to cover the bottom of the skillet. Fry breaded okra, turning and separating as needed to brown it to crispy, yet tender perfection. Serve immediately.
