Pine Nuts and Corn Stir-Fry

Pine Nuts and Corn Stir-FryPine nuts and corn combine for an amazing side dish. This dish is also perfect for entertaining as it can be prepared in advance, refrigerated and reheated.

Recipe Ingredients:

1 tablespoon light olive oil
3 green onions, chopped
1 (16-ounce) package frozen corn, defrosted
1 cup (4 ounces) pine nuts, toasted
1/2 medium green bell pepper, chopped
1 tablespoon MAGGI Instant Chicken Flavor Bouillon
2 teaspoons granulated sugar

Cooking Directions:

  1. Heat oil in medium skillet over medium-high heat. Add green onions; cook for 1 minute.
  2. Add corn, nuts and bell pepper; stir-fry for 2 minutes.
  3. Add bouillon and sugar; cook for 1 minute.
  4. Serve immediately.

Makes 4 servings.
