Provençal Zucchini Gratin

Recipe Ingredients:
2 teaspoons olive oil
1 pound zucchini, sliced into 1/4-inch rounds
2 medium Roma tomatoes, diced (1/2-inch)
1 cup sliced California Ripe Olives
1/4 cup (2 ounces) crumbled goat cheese
2 teaspoons chopped thyme
Kosher salt and ground black pepper to taste
1/2 cup fresh bread crumbs
Cooking Directions:
- Preheat olive oil in a medium sized sauté pan over medium high heat. Add zucchini and cook for 2 to 3 minutes until just tender.
- Stir in tomatoes, California Ripe Olives, goat cheese and thyme and remove from heat. Season to taste with salt and pepper.
- Spread mixture into a greased 11x7-inch shallow baking dish in one even layer.*
- Top with bread crumbs.
- Bake in a 450°F (230°C) oven for 8 to 10 minutes until well-browned.
Makes 4 servings.
*Alternate Method: Place into 6 greased shallow ramekins for individual servings and proceed with directions.
