Red Rice with Vegetables

Red Rice with VegetablesColorful and versatile, this red rice and vegetable dish is a wonderful addition to any meal.

Recipe Ingredients:

1 tablespoon vegetable oil
2 cups long-grain rice
2 cups water
1 cup frozen vegetables
2 (3.98-ounce) packets MAGGI Sofrito Seasoning Paste (tomato, garlic, onion)
1 MAGGI Chicken Flavor Bouillon Tablet, crushed

Cooking Directions:

  1. Heat oil in medium saucepan over medium-high heat. Add rice; cook, stirring constantly, until golden brown.
  2. Add water, frozen vegetables, sofrito and bouillon; mix well. Bring to a boil; reduce heat to low. Cover; cook for 25 to 30 minutes or until rice is tender and liquid has evaporated.

Makes 8 servings.
