Sweet Potato Soufflé
This delicious, orange-scented sweet potato soufflé is a wonderful side dish for the holidays.
1 (14.5-ounce) can mashed sweet potato
1 cup granulated sugar
1/4 cup milk
1 teaspoon grated orange rind
2 tablespoons fresh orange juice
1 teaspoon vanilla extract
2 large eggs, lightly beaten
2/3 cup all-purpose flour - divided use
1/2 cup butter or margarine, melted - divided use
1 cup chopped pecans
1 cup firmly packed brown sugar
- Stir together first 7 ingredients, 1/3 cup flour, and 1/4 cup butter; pour into a lightly greased 13- x 9-inch baking dish.
- Combine chopped pecans, brown sugar, remaining 1/3 cup flour, and remaining 1/4 cup butter; sprinkle over potato mixture.
- Bake in a preheated oven at 350°F (175°C) for 40 minutes or until bubbly.
Makes 10 to 12 servings.
