Arrabbiata White Bean Soup

Arrabbiata White Bean SoupA quick and easy meal! Savor the flavors of Italy with this spicy white bean soup made with fresh carrots, onions, garlic and marinara sauce—with a flavorful "arrabbiata" kick from red pepper flakes. (Arrabbiata means "angry" in English.)

Recipe Ingredients:

1 tablespoon extra virgin olive oil
1 cup thinly sliced carrot
1/2 cup diced onion
2 teaspoons finely chopped garlic
3 cups (24 ounces) chicken or vegetable broth
1 (15-ounce) container BUITONI Refrigerated Marinara Sauce
1/4 to 1/2 teaspoon red pepper flakes, or to taste
2 (15-ounce) cans cannellini or small white beans, drained
1/4 cup (0.75 ounce) BUITONI Refrigerated Freshly Shredded Parmesan Cheese

Cooking Directions:

  1. Heat oil in large saucepan over medium-high heat. Add carrot, onion and garlic; cook, stirring occasionally, for 2 minutes.
  2. Add broth, sauce and red pepper flakes; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 20 minutes or until carrot is tender. Add beans; cook for an additional 5 minutes.
  3. Top with cheese.
