Arrabbiata White Bean Soup
A quick and easy meal! Savor the flavors of Italy with this spicy white bean soup made with fresh carrots, onions, garlic and marinara sauce—with a flavorful "arrabbiata" kick from red pepper flakes. (Arrabbiata means "angry" in English.)
Recipe Ingredients:
1 tablespoon extra virgin olive oil
1 cup thinly sliced carrot
1/2 cup diced onion
2 teaspoons finely chopped garlic
3 cups (24 ounces) chicken or vegetable broth
1 (15-ounce) container BUITONI Refrigerated Marinara Sauce
1/4 to 1/2 teaspoon red pepper flakes, or to taste
2 (15-ounce) cans cannellini or small white beans, drained
1/4 cup (0.75 ounce) BUITONI Refrigerated Freshly Shredded Parmesan Cheese
Cooking Directions:
- Heat oil in large saucepan over medium-high heat. Add carrot, onion and garlic; cook, stirring occasionally, for 2 minutes.
- Add broth, sauce and red pepper flakes; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 20 minutes or until carrot is tender. Add beans; cook for an additional 5 minutes.
- Top with cheese.
