Cream of Cauliflower Soup

No recipe image available.Adding nonfat dry milk increases the 'creaminess' without adding extra fat to this tasty cream of cauliflower soup seasoned with cheddar cheese.

Recipe Ingredients:

1 red onion, sliced
1 tablespoon butter
2 tablespoons all-purpose flour
3 tablespoons NESTLÉ® CARNATION® Nonfat Dry Milk
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated Milk
1 1/2 cups milk
1 pound cauliflower, chopped
1 cup shredded cheddar cheese

Cooking Directions:

  1. In a saucepan, sauté sliced red onion in butter over medium heat until soft. Stir in flour and powdered milk and cook until bubbly. Gradually add evaporated milk, milk, mixing well.
  2. Add chopped cauliflower and bring to a boil. Reduce the heat and simmer until the carrots are tender, about 10 minutes.
  3. Place the soup in a food processor or blender and purée until smooth. Stir in shredded cheddar cheese.
