Cream of Spinach Soup

No recipe image available.Adding nonfat dry milk increases the 'creaminess' without adding extra fat to this tasty cream of spinach soup seasoned with thyme.

Recipe Ingredients:

1 red onion, sliced
1 tablespoon butter
2 tablespoons all-purpose flour
3 tablespoons NESTLÉ® CARNATION® Nonfat Dry Milk
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated Milk
1 1/2 cups milk
1 (10-ounce) package frozen chopped spinach, thawed
1 teaspoon thyme

Cooking Directions:

  1. In a saucepan sauté sliced red onion in butter over medium heat until soft. Stir in flour and powdered milk and cook until bubbly.
  2. Gradually add milk and evaporated milk, mix well. Add thawed chopped spinach and bring to a boil.
  3. Reduce the heat and simmer for about 10 minutes. Place the soup in a food processor or blender and purée until smooth. Stir in thyme.
