Vegetable Soup

No recipe image available.Once the veggies are prepped, this 'vegetables only' soup takes just 20 minutes to cook.

Recipe Ingredients:

1 cup diced potato
1 cup chopped cabbage
1/2 cup chopped onion
1/2 cup diced celery
1/2 cup sliced carrot
1/2 cup sliced green beans
1/4 teaspoon dried oregano
1/4 teaspoon dried marjoram
1/4 teaspoon salt
1 bay leaf
1/8 teaspoon ground pepper
2 cups vegetable broth or water

Cooking Directions:

  1. In a kettle, combine diced potato, chopped cabbage, chopped onion, diced celery, sliced carrots, sliced green beans, oregano, marjoram, salt, bay leaf, pepper, and water. Cover and boil gently for 10 minutes.
  2. Stir in chopped tomatoes and cook until the vegetables are tender, about 20 minutes.
  3. Remove the bay leaf before serving.

Makes 6 servings.
