
Southwest Turkey Casserole
This casserole may remind you of a turkey salad sandwich but with a Southwestern influence, which is sure to tickle your taste buds. A great recipe for using leftover turkey, too.
Recipe Ingredients:
2 cups shredded leftover cooked turkey
1 1/2 cups diced celery
1 cup mayonnaise
1/2 cup slivered almonds, toasted
1 (4-ounce) can diced green chiles
1/4 cup diced onion
1 tablespoon lemon juice
1 tablespoon lime juice
1/2 cup shredded Mexican blend cheese
1 cup crushed corn chips
Cooking Directions:
- Preheat oven to 350°F (175°C). Lightly grease 1 1/2-quart casserole.
- Combine cooked and shredded turkey, celery, mayonnaise, almonds, chiles, onions, lemon juice and lime juice.
- Transfer to prepared casserole. Sprinkle with cheese and chips.
- Bake for 30 to 35 minutes or until hot and cheese is melted.
