Southwest Turkey Casserole

Southwest Turkey CasseroleThis casserole may remind you of a turkey salad sandwich but with a Southwestern influence, which is sure to tickle your taste buds. A great recipe for using leftover turkey, too.

Recipe Ingredients:

2 cups shredded leftover cooked turkey
1 1/2 cups diced celery
1 cup mayonnaise
1/2 cup slivered almonds, toasted
1 (4-ounce) can diced green chiles
1/4 cup diced onion
1 tablespoon lemon juice
1 tablespoon lime juice
1/2 cup shredded Mexican blend cheese
1 cup crushed corn chips

Cooking Directions:

  1. Preheat oven to 350°F (175°C). Lightly grease 1 1/2-quart casserole.
  2. Combine cooked and shredded turkey, celery, mayonnaise, almonds, chiles, onions, lemon juice and lime juice.
  3. Transfer to prepared casserole. Sprinkle with cheese and chips.
  4. Bake for 30 to 35 minutes or until hot and cheese is melted.

Makes 4 servings.
